Kinda Easy Delicious Calzone Recipe

Made  this Kinda Easy Delicious Calzone Recipe up and was it somewhat easy but was delicious to. Will be whipping this one up again. Called the neighbors over and they were all eaten up and I’m not even a chef.

Stuffing ingredients:
1/2 pound hot breakfast sausage
1 pound ground beef
1/2 onion, diced finely
1 10 ounce can Rotel (tomatoes and chilies)
8 ounces Ricotta cheese
1/2 cup grated mozzarella cheese
1/2 cup grated Monterey Jack Cheese
1 egg, beaten
salt
black pepper
olive oil for brushing

Crust ingredients:
1 tsp active dry yeast
4 cups all purpose flour
1 tsp kosher salt
1/2 cup extra virgin olive oil

Crust instructions:
Pour 1 1/2 cups warm water into a bowl and sprinkle the yeast over the water.
Combing flour and salt in a separate mixing bowl. Mix on low speed with an electric mixer and then slowly add the olive oil a little at a time. Carefully stir yeast/water mixture. Add mixture into the flour oil mixture and mix until the dough comes together and forms a ball. Drizzle some olive oil in a clean medium size bowl and turn dough until coated with the oil. Cover with a moistened towel and put in a warm place for 1-2 hours.

While crust is rising, make the meat stuffing.

Preheat oven to 450 degrees.

Meat stuffing instructions: Combine sausage and ground beef with the diced onion and brown over a medium heat. Drain. Add Rotel and stir until combined, then cook for about 2-3 minutes. Then cool. In a separate bowl mix together all 3 cheeses, egg, salt and pepper. Add cooled meat to the cheese mixture and carefully mix just until combined.

After crust dough has finished rising, divide dough into 8 equal sized balls. Roll each ball on a floured surface, into 6 inch circles.

Place 1/8 of the meat stuffing mixture in the middle of each circle.
Fold half of the circle over the other half, gently pressing to slightly spread and flatten the filling. Use a fork to press around the edge to seal it closed. Place the Calzone on a baking sheet. Repeat with the remaining dough and filling. Brush each Calzone slightly with olive oil.

You’ll be glad you made this one up. So delicious!

Roby And Kim’s Delicious Italian Roasted Potatoes Roby Judge, Kim’s husband made these delicious potatoes!

Italian Roasted Potatoes

Ingredients:

8 medium potatoes, washed and cubed
1/2 cup Parmesan cheese, shredded
1/4 cup breadcrumbs
1/4 cup olive oil
1 packet of Wish Bone Robusto Italian Dressing & Seasoning Mix
Instructions:

Preheat oven to 425 F degrees.
Wash and cut the potatoes in cubes. Fill a medium pot with water, add the potatoes to it and cook the potatoes for about 10 minutes just until they are a little tender. Do not cook through.
In a bowl, mix the Parmesan cheese, breadcrumbs and Italian seasoning.
Drain the potatoes and toss with olive oil. Sprinkle Italian mixture over the potatoes and toss, making sure each potato is coated with the mixture.
Bake for 30 minutes or until potatoes are golden.

I made this cobbler today and it is so delicious and easy!

Kim’s Simple Homemade Blueberry Cobbler

Ingredients:
2 cups of fresh blueberries (you can use 1 can of blueberry pie filling if you want but it will be sweeter)
1 cup sugar
3/4 cup flour
1/2 cup butter
2 teaspoons baking powder
3/4 cup milk
pinch of salt

Preheat oven to 350 degrees F

Put the butter in 8″x8″ square baking dish and put in oven until butter is completely melted.

Mix the dry ingredients with the milk then pour over the melted butter. Do Not Stir. Carefully add spoonfuls of blueberries on top of the mixture. Do NOT Stir.

Bake in over for 45-50 minutes until golden brown.

Serve with whip cream or a scoop of vanilla ice cream.

With Allergy and Flu season here, this natural remedy should bring some relief. Put 1 tablespoon of the syrup into a cup of hot water and sip. It helps soothe a sore throat and calm a cough. It will also help with relieving allergies and gives your immune system a good boost.

Lemons give you Vitamin C for your immune system, Coconut oil helps fight infection and reduce your symptoms, and honey helps to soothe the throat.

Mix together the following:
3 tablespoons lemon juice (preferably fresh squeezed)
1/4 cup Organic raw honey
2 tablespoons organic coconut oil
Put 1 tablespoon of mixture into a cup of hot water.
Stir together and slowly sip when you have allergies or flu-like symptoms

My husband is busy in the kitchen again. Here is what he came up with this time!

Easy Chicken Bacon Wrap

Make as many as needed:
Chicken Breast
Bacon
Monterey Jack Cheese
Horseradish Sauce

Cut chicken breast lengthwise.
Put one tablespoon of horseradish sauce inside chicken.
Cut monterey jack cheese to place inside chicken.
Wrap 3 to 4 slices of bacon round chicken.
Place in a Pyrex glassware.
Cook at 375 for 30 minutes, for crispy bacon broil last 5 minutes. Make sure internal chicken temperature reaches 165.

Poppy Seed Chicken

4 – Large Chicken Breasts
3 cans – Cream of Chicken Soup
16 oz – Sour Cream
1 lbs – Monterey Jack Cheese
1 stick – Butter
1/2 cup – Water
1 tbsp – Poppy Seeds
2 tubes – Ritz Crackers

Boil chicken and cut up into pieces. Mix together chicken pieces, cream of
chicken soup, sour cream, monterey jack cheese, melted butter, water and poppy
seeds. Place in a casserole dish. Crush Ritz crackers and spread over the
top of casserole. Cook at 325 for 30 minutes.

Cook some rice as directed.
Hint: use plain unseasoned rice because this is a very rich tasting recipe!

I have been looking for a good healthy crunchy granola bar and could not find one I liked, so I came up with this recipe today.
Kim’s Healthy Crunchy Granola Bars
Preheat oven to 325 degrees.
3 cups rolled oats (not quick oats, use regular)
2 cups rice krispie cereal
1/3 cup brown sugar (packed)

1 Tbsp protein powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
USE a food chopper to chop up and mix the following ingredients together: 3/4 cup almond slivers, 1 Tbsp Flaxseed, 2 Tbsp shredded coconut, 1 Tbsp dates or raisins, 1 Tbsp pepitas

THEN toast in 325 degree oven for 10 minutes.

NEXT, mix with other dry ingredients until well blended.

HEAT 1/2 cup coconut oil, 1/3 cup natural honey in microwave for about 20 seconds to liquify then add 1 teaspoon vanilla and stir.

NEXT drizzle liquids on top of dry ingredient mixture and mix until all oats are covered and moist.

With a large spatula, press granola firmly into a 17×11 pan.

Bake at 325 degrees for 20-25 minutes.

Let cool about 1 hour before cutting and removing from pan. Don’t use another size pan. The ingredients are carefully measured and altering pan size will alter how these turn out.

Cajun Stuffed Delicious Bell Peppers

If you like good food then you are going to really love these
Cajun Stuffed Delicious Bell Peppers
4 med or 3 large sweet bell peppers orange, red or yellow
1 lb. of ground beef or 1 lb. ground turkey/sausage blend
1 cup of cooked rice
2 Tbsp minced or chopped dry onion
1/2 teaspoon of Cajun seasoning (I use Slap ya Mama)
1 Tbsp minced garlic
1/4 tsp sea salt
1/4 tsp black pepper

1 can of Rotel tomatoes, drained
1 10 oz can tomato puree

2-3 tablespoons of fresh, dry or panko bread crumbs
6-8 very thin slices of cheddar cheese

Preheat oven to 350 degrees F.

Cut the peppers lengthwise and scrape out seeds and ribs.

Mix together rice, onion, garlic, sea salt, black pepper, cajun seasoning. Add 1/2 can of the tomato puree and 1/2 can Rotel.
Add this mixture to raw ground beef or ground turkey and Mix Well.

Pour 1/2 cup of water into the bottom baking dish and place peppers in the dish. Scoop the beef and rice mixture evenly into each pepper half, topping each off until you use all of the filling.

Mix the remaining 1/2 can Rotel tomatoes with the remaining tomato puree, and spoon evenly over the tops of each pepper and sprinkle each with 1/2 tsp panko bread crumbs (can use 1 tsp if desired).

Bake tightly covered at 350 degrees F for 60 minutes, or until peppers are tender and filling is cooked through. Remove, add 1 slice of cheese to top, and return to oven until cheese melts.

Hint: If you would like it spicier use the HOT Rotel and double the Slap ya Mama (cajun seasoning). Ooh la la hot!

Ingredients:

1-1/2 c. sugar
1 c. sour cream
1/2 c. butter, softened
2 eggs
1-3/4 (3 or 4) ripe bananas, mashed
2 tsp. vanilla extract
2 c. all purpose flour
1 tsp. baking soda
3/4 tsp. salt
1/2 c. chopped walnuts (optional)

Brown Butter Frosting:
1/2 c. butter
4 c. powdered sugar
1-1/2 tsp. vanilla extract
3 tbsp. milk

Directions:
1. Heat oven to 375F. Grease and flour 15×10-inch jelly roll pan. For the bars, in a large bowl, beat together sugar, sour cream, butter, and eggs until creamy. Blend in bananas and vanilla extract. Add flour, baking soda, salt, and blend for 1 minute. Stir in walnuts.

2. Spread batter evenly into pan. Bake 20 to 25 minutes or until golden brown.

3. Meanwhile, for frosting, heat butter in a large saucepan over medium heat until boiling. Let the butter turn a delicate brown and remove from heat immediately.

4. Add powdered sugar, vanilla extract and milk. Whisk together until smooth (it should be thicker than a glaze but thinner than frosting). Using a spatula, spread the brown butter frosting over the warm bars (the frosting will be easier to spread while the bars are still warm).

Easy To Make Shepherd Pie Muffins

Makes 10 muffins!

Ingredients:
1 lb of ground beef
1/2 teaspoon of minced garlic
1/3 cup of ketchup
4 Tbsp. of chopped onion
1/2 teaspoon salt
1 1/4 cup of water
3 Tbsp. butter
1 Tbsp. cider vinegar
1 1/4 cup mashed potato flakes
3/4 cup of lays potato chips, crushed
1 3 oz package of cream cheese, cubed
1 12 oz tube of refrigerated buttermilk biscuits

Directions:
1. Preheat oven to 375 degrees.

2. Cook beef and onion over medium heat until no longer pink. Add garlic and cook for 2 more minutes. Drain.

3. Stir in ketchup, cider vinegar, and salt. Set aside.

4. In saucepan, bring water and butter to a boil. Pour into a small bowl. Whisk in potato flakes until blended. Beat the cream cheese in until smooth.

5. Grease your muffin pan. (This should make 10 muffin cups)

6. Place 1 biscuit onto the bottom and press the dough onto the bottom and sides of the muffin cup. Repeat for all 10 muffins cups.

7. Fill the muffin cups with the beef mixture. Spread potato mixture over the meat. Sprinkle with the crushed potato chips and lightly press down.

8. Bake for 25 minutes or until golden brown.

9. Serve immediately.
